Granola and/or Energy Bites!
Ingredients: 1/2 cup pb 1/2 cup maple syrup 1/4 cup maple sugar 4 cups oats 1 cup coconut flakes 2 cups sliced/chopped almonds 2 handfuls any chopped dried fruit (dates, apricots, raisins) For granola: 1. Add 1/2 cup pb, 1/2 cup maple syrup, and 1/4 cup maple sugar to a saucepan on the stove and stir until melted. 2. While that's melting, add 4 cups oats, 1 cup coconut flakes, 2 cups sliced/chopped almonds, and 2 handfuls of any chopped dried fruit. 3. Add the wet to the dry mixture and stir until combined. 4. Place onto a greased tray and bake at 325 for 30 minutes (flip/stir 2x). 5. Let cool so chunks form! For energy bites: 1. Use the unbaked granola mix and add 1/4 cup melted coconut oil. 2. Mix and form into balls (drizzle with some melted dark chocolate if you want). 3. Store in the freezer! *Credit to Katja's teammate, Kendall Discenza
